Perimenopause - Menopause Recipe Tip, September 15, 2007.

Cabbage is a favorite fall crop, and perfect for a colon cleansing diet. It's relatively low carb, high fiber, and for some strange reason, hits "the spot" relieving what I call the "thungries." This satisfying side dish will quickly become a staple in your colon cleansing regimen.

Braised Red Cabbage with Currants.

1 tablespoon whole caraway seeds or cumin seeds
2 teaspoons dry red wine.
1 thinly sliced red or yellow onion
1/4 to 1/2 teaspoon salt.
1 small thinly sliced red cabbage
1/2 cup currants
2 to 3 tablespoons red wine vinegar, cider vinegar or rice vinegar
2/3 cup water or apple juice.

Toast the caraway or cumin seeds in a dry skillet until aromatic - about 1 minute. Heat the wind in a large pot over medium heat. Add the onion and salt, and cook, stirring, about 5 minutes until the onion softens and smells sweet. Add water as needed to keep the vegetables from sticking.) Add the caraway or cumin seeds and currants. Combine the vinegar and water or apple juice, pour the liquid over the cabbage, and mix well. The cabbage should become bright red.

Preheat the oven to 375 degrees. Lightly oil a 2-quart baking dish and spoon the cabbage and liquid into it. Cover and bake for 45 to 60 minutes. Serve either warm or at room temperature.
