Delicious Hamburger Substitute Crock Pot Lasagna.

 


Your family won't even know they're not eating red meat with this quick, easy and delicious recipe. Also a great pot luck meal, but you may want to substitute ground turkey for the hamburger substitute crumbles for friends not as health minded as you.

1 lb. hamburger substitute crumbles
1 t. Italian seasoning
1 28 oz. jar organic spaghetti sauce
1/3 c. water
8 lasagna noodles
1 15 oz carton ricotta cheese or cottage cheese
2 c. shredded mozzarella cheese.
1 sm. can sliced mushrooms (optional).

Spray inside of crock pot with an olive oil spray. Mix spaghetti sauce and water. Place 4 uncooked noodles in the crock pot. Prepare hamburger substitute crumbles according to package instructions and mix with the seasonings. Layer the noodles with the meat mixture, sauce and mushrooms (if preferred.) Spread with the ricotta or cottage cheese and sprinkle with 1 cup mozzarella. Layer the remaining noocles, meat, sauce mixture, mushrooms and mozzarella cheese.

Cover, cook on high for 1 hour. Reduce heat to low and continue cooking for 5 hours (longer if using a large crock pot.)
