"Bursting with Flavor" Summer Creamy Macaroni Salad.



This is a low-fat version of a typical deli macaroni salad with vegetables and a light, creamy dressing. This is especially delicious when the garden is bursting with fresh vegetables and dill.

Ingredients:

1/2 pound cooked macaroni.
1/2 cup low-fat cottage cheese.
1/4 cup reduced-fat mayonnaise.
1 tablespoon cider vinegar
1 tablespoon olive oil (can be eliminated if desired).
1 clove minced garlic.
1 cup broccoli florets
1 cup diced tomatoes.
1/2 cup diced cucumber.
1/4 cup chopped celery.
1 cup cut asparagus spears.
1 diced dill pickle.
2 thinly sliced green onions.
1 tablespoon minced fresh dill.
salt and pepper to taste.

Combine cottage cheese, mayonnaise, cider vinegar, olive oil and garlic in food processor or blender and process until smooth. Set aside. Steam the broccoli until bright green (about 5 minutes) and plunge into cold water to cool, then drain. Steam asparagus until just tender, then follow same procedure to cool. Mix all the ingredients together and chill for approximately 30 minutes.

Serves 4 to 8.
